Liking Lately: Recipe Edition

In my house, we go through peaks and valleys when it comes to meal planning and meal prep. I've mentioned this before. My husband and I will get on a tear for a while, diligently planning and executing shopping trips, menus, food prep, etc. Then we get a busy week or two, or have some travel or holidays thrown in, and it all falls by the wayside and we eat a lot of scrambled eggs and things we find in our freezer. Lately I've been on top of things, thanks in part to inspiration from a Facebook group for food ideas, which my friend A'Dell recently came up with.

I've tried a few new recipes lately, and wanted to share.

1. But first! This quinoa salad in its many iterations (I make it with or without feta, craisins, and roasted garbanzos; I make it with whatever vegetables and toasted nuts I have on hand; I make it with or without avocado, chicken, salmon, or other meat/fat to make it a heartier meal) continues to be a hit at my regular rowing club potluck dinners, and is a frequently requested recipe. (Instagram photo below is one of my many versions.)

2. Speaking of potlucks and quinoa, I think I'm going to try this Crunchy Cashew Thai Quinoa Salad with Ginger Peanut Dressing recipe for my next potluck. It includes so many of my favorite foods and flavors.

3. I also recently made this kale and Brussels sprouts salad for a potluck, and it was also a hit. And it was super fast because I made use of Trader Joe's shredded, raw Brussels sprouts, and a bag of their Tuscan kale, which is already chopped (I just removed any big stems and chopped the leaves more finely). This would be delicious alongside grilled chicken prepped in my favorite marinade, and in fact I am putting that on my menu for next week right now.

Note: I used parmesan and toasted almond slivers because that's what I had. Easy-peasy.

4.  And finally, I miss writing at Food Lush. I am always delightfully surprised when I see someone post a link to or try a recipe from the site, despite it having closed down three years ago. This recipe for Cashew Chicken Lettuce Wraps is one I'd tried before, but I remember not loving it, and we never made it again. It turns out it's just so much better (to me! and Zach!) over rice. My husband was raving about it, and claims it was the best meal he's had in a while.

Cashew Chicken, for Lettuce Wraps or Over Rice

Note: if enjoying the recipe over rice, you will need to quadruple the sauce, as listed below.

  • 1 Tablespoon rice vinegar
  • 3/4 Tablespoon brown sugar
  • Few dashes red pepper flakes
  • ¼ teaspoon ground ginger
  • 1 teaspoon sesame oil
  • 2-⅓ Tablespoons soy sauce or coconut aminos, divided
  • 3 Tablespoons canola oil (or oil of choice)
  • Approx. 1 and 1/4 lb. boneless, skinless chicken thighs, trimmed and diced
  • 1 medium or large yellow (or white) onion, diced
  • 1 Bunch of green onions, white and light green parts sliced; dark green parts discarded
  • 3-4 celery stalks, diced
  • 1 can sliced water chestnuts, drained and rinsed (chop them if you please)
  • 2 cloves garlic, minced
  • 1/2 cup roasted, salted, chopped cashews (I did half almonds, half cashew, because that's what I had. An extra handful of nuts certainly won't hurt!)
  • 8 leaves Of butterhead, bib or other large leaf lettuce (romaine even works), washed and dried, if doing lettuce wraps.

For the sauce, mix together rice vinegar, brown sugar, ground red pepper, ground ginger, sesame oil, and 2 tablespoons of soy sauce, making sure to dissolve brown sugar. Set aside. (Quadruple these measurements if serving over rice instead of in lettuce leaves.)

Heat oil in pan over medium to medium-high heat. Add diced chicken and brown (about 4 to 5 minutes). Remove chicken from oil, reduce heat to medium. Add onions and garlic to pan with remaining soy sauce (1/3 tbsp. = 1 tsp.) to pan; cook until translucent. A few minutes into cooking the onion and garlic, add the celery and water chestnuts. When onions and garlic are clear and tender, add stir fry sauce, browned chicken and green onions. Saute mixture for a few minutes and add cashews shortly before removing from heat.

Spoon chicken mixture into individual lettuce leaves, wrap and devour! Or serve over rice alongside steamed broccoli if desired. Add your favorite hot sauce, more cashews or soy sauce if you're feeling kicky.

Things I'm Liking Lately

Haven't done one of these in a while!

(I'm not paid for any of this, it's just stuff I'm diggin'.)

1. Nextdoor. Are you familiar with Nextdoor? It's sort of the modern day version of knowing which of your neighbors will let you borrow a cup of sugar.

A month or two ago I went out to get the mail, and long story short, came across what appeared to be someone's pet bunny rabbit running around. A few other neighbors and I tried to catch it in order to keep it safe until we could get it home, to no avail. I'd heard of Nextdoor but never used it, and trying to reconnect Peter McFloofy Hops (I assume it was a boy and that was his name) with his parents proved to be the perfect reason to start. I unfortunately didn't find the bunny's owner (and haven't seen him since), but I have since come to rely on Nextdoor to find out what's going on around me, from events to recent crime to missing items to new and closing restaurants and businesses. Did I mention it's free? A good way to connect in our sometimes isolating modern world. Recommend.

2. Writing GoodReads reviews. I have proclaimed 2016 the year of the book, and apparently it's also the year of the review. You can find some direct links on my books page.

3. Ghirardelli brownie mix. The best. Better than homemade (yeah, that's right). Why reinvent the wheel? We had some folks over to watch a sportsball game recently, and I whipped up some of these. In doing so I was reminded of why I always have a box in the cupboard in the event of impromptu gatherings, sportsball or otherwise.

4. The FugGirls' Downton Abbey Recaps. The only thing that's not to like is that I didn't start watching (and thus reading) sooner. Favorite line so far this season (spoiler-ish alert): "...The Blackmailer takes a bite of Mary's toast, and then tosses it aside with disdain, and the look on Mary's face is like, "HOW DARE YOU TREAT MY TOAST SO DISRESPECTFULLY.""

5. Thayer's rose petal witch hazel. Not a new love, and I can't remember if I've mentioned it before, but I recently was raving about it to a friend, and after trying it she agrees: it's a magical potion.

6. A 30 day plank challenge. After a few months off from rowing while recovering from jaw surgeries, my core has gone all noodly. I'm working at building it back up. There are a million of these challenges out there so head to the google machine and find the one that works for you. (They do all seem to be basically the same.)

7. This pastina recipe for some cozy winter comfort. And/or an upset stomach. (In which case maybe leave out the parm.)

8. HabitBull. Shoot. This app. I am kind of obsessed with it. It allows you to set goals with varying metrics and then satisfyingly tick them off when completed. So whether it's something you want to do daily, weekly, multiple times a week, by amount/numbers (miles run, pages read), or simply Complete or Incomplete (did you call your Mom?), this has it all. I love it. I even paid the $3.99 for the upgrade. That never happens.

Things I'm Enjoying Lately

OPI's Cajun Shrimp

The perfect color for warmer weather. It's on the coral side of watermelon: in some lights it looks orange, in some it looks pink, and in others it looks red. Because of that, no pictures I've seen can really do it justice, but this one from Amazon might sell you on how pretty it is.

Nordstrom's Zella Brand 'Live In' Leggings

I have a bunch of these, including two pairs of the crops (these and these), which I wear and wash at least once a week each. I used to do yoga in them regularly, and now I row in them regularly. I'm climbing in and out of a boat, which means more chance for catching and tearing and salt and sand and grime. I sweat in them, trudge through salt water in them, and despite all that (and being over a year old) they are, quite literally, no worse for the wear. Every time I pull them out of the dryer (are they supposed to go in the dryer?) I'm amazed that they look exactly the same. I am tough on clothes I don't work out in, so I'm impressed that these have held up so well.

Don't tell anyone, but I've also worn the black leggings under dresses. They act like super comfortable Spanx, and no one is the wiser.

Speaking of Nordstrom (and ModCloth), I'm in a vintage-slash-Anthropologie-style wedding in a few months, and we're wearing hairpieces of various sorts. I've bought three and I can't decide. If you need a sweet retro headband, giant hair flower, or fascinator (the one I bought is no longer available, but imagine something similar in cream) look no further. (Help me come up with an argument for keeping all three.)

This Eat Smart Sweet Kale Salad kit from Costco. I went through two all by myself last week. It comes with a tasty poppyseed dressing that I understand is very similar to Brianna's. I am not generally a fan of creamy dressings, but this does go well with the kit and it's a nice change for me. However, I thin it out by dumping it in a mason jar and adding apple cider vinegar at a ratio of almost 50/50. Then I add more poppy seeds, a bunch of pepper, and a pinch of salt and give it a hearty shaking. This suits my preference and cuts the calories and sugar as well. Doing the dressing from just one kit this way gets me through almost two bags of the salad. 

For staying power I need a bit more fat and protein (with the thinned out dressing on this, the calories are pretty low for a meal), and I've added all kinds of stuff to that end: bacon, avocado, Aidells chicken & apple sausage,  salmon burgers. It's excellent with any of the above, plus the addition of a chopped Honeycrisp apple.

Speaking of those salmon burgers, I can't recommend them enough. My friend Sarah recommended them a while back, and as I think I've said before, I will always take her food advice. They are so convenient to have on hand to throw on a lunch salad, or to help make a quick dinner. They aren't simply straight salmon, but they're super convenient and the ingredients aren't many or terrible, so I'm calling it a win.

Aussie bites. Another Costco find. A sort of hybrid of granola-cookie-breakfast biscuit with wholesome, simple ingredients that you can pronounce, and lots of staying power. On mornings when I row, I need something in my stomach, but due to the early hour and hard workouts it needs to be small, healthy, energy-sustaining, quick, and easy. Sort of a tall order. I was having a granola bar, with mixed results, until I discovered these. I eat two with my one cup of coffee at 4am, and they hold me so much better than granola bars! I no longer suddenly feel in the middle of practice like my stomach is going to collapse on itself. There's no crash. When I come home, I'm hungry but not hangry. I can get a shower and a second cup of coffee before I start to feel in dire need of my second breakfast of oatmeal. My husband Zach has had the same experience when he eats two before running. 

One note, I don't really like the taste of honey, and I cannot taste any honey in these.
